Blackberry-Brie Pizza

People who know me, know I’ve never met a pizza I didn’t like. A slice grabbed from a hole-in-the wall pizzeria and eaten, folded in half, while run-walking the streets of Manhattan remains my favorite. However, my insatiable desire for pizza runs the gambit from high-end, overpriced gourmet pies to Domino’s delivery. Because here’s the thing about pizza - even if it’s not that great, its still pizza! Inspired by all the beautiful blackberries I’m finding lately, I pulled out a recipe I’d torn from a Southern Living magazine a few years ago and adapted it to suit my taste. I managed to take this quick photo before I devoured it.


2 tablespoons butter
1 large sweet onion, thinly sliced
1 pound store-bought or homemade pizza dough
2 tablespoons extra virgin olive oil, divided
12 ounces Brie cheese, sliced
1 ½ cups fresh blackberries, halved
2 cups loosely packed fresh arugula
2 teaspoons balsamic vinegar
¾ cup honey roasted pecans


1. Preheat oven to 425°. Melt butter in a large skillet over medium-high heat; add onion and cook, stirring often, 20 minutes or until golden brown.

2. On a lightly floured surface, roll dough into a 12 to 14-inch round. Place round on a parchment lined baking sheet. Brush with 1 tablespoon oil. Top dough with caramelized onions, Brie, and blackberries.

3. Bake pizza at 425° for 12 to 14 minutes or until golden.

4. Toss together arugula, balsamic vinegar and remaining 1 tablespoon oil. Add salt and pepper to taste. Sprinkle baked pizza with arugula mixture and pecans just before serving.
