These irresistible party bites are a great way to use up leftover mashed potatoes. Depending on how thick your mashed potatoes are, you may need to add more flour to the mixture. Ultimately the mixture should be like Play Doh and easily formed into patties. I like to keep a batch of the uncooked patties in my freezer so I’m always prepared for an impromptu party. Mango chutney also makes a good dip.
For the fritters:
Using your hands, squish together 2 ½ cups cooled mashed potatoes, 1 lightly beaten egg, 1 small, thinly sliced scallion, 3 tablespoons flour, 2 teaspoons curry powder, and salt & pepper to taste. Gently mix in ½ cup frozen peas, thawed and drained.
Form the potato mixture into smallish (1-1/2 to 2-inch) patties. Dredge each patty in flour, shaking off any excess. Heat ¼ cup vegetable oil in a large skillet. Fry patties in batches over medium high heat until golden, about 2 minutes per side. Drain on a paper towel lined plate and serve hot.
For the dip:
Mix together 1 cup plain yogurt, ½ cup sour cream, 1 teaspoon each lime juice, curry powder and grated fresh ginger. Add salt and cayenne pepper to taste. Top with fresh chopped cilantro, if desired.
