Chocolate Fudge Brownies with Chocolate-Cream Cheese Frosting

Looking for a DIY gift idea? Think old school flowers and chocolate, but with a twist. These tried and true brownies never fail to please. I served them at a business meeting last week, along with an assortment of other homemade baked goods, and as usual, the brownies were the most popular. You can find the basic brownie recipe here. The frosting recipe is below. Box up the brownies in a pretty package and pair with a fresh bouquet from your garden or the local farmer’s market. I guarantee this homespun classic combo will be a bigger hit with your recipient than the usual bottle of wine.

Chocolate Frosting

1 (8 ounce) package cream cheese, softened
1⁄2 cup (1 stick) unsalted butter, softened
3 cups confectioners’ sugar
1⁄2 cup good quality unsweetened cocoa powder (I used Scharffen Berger)
1 teaspoon pure vanilla extract
1/4 teaspoon salt

1. In a mixing bowl, with an electric mixer, beat the cream cheese and butter until smooth.

2. Add sugar, cocoa, vanilla and salt and beat until very smooth.

3. Spread over the brownies or store in the refrigerator for up to 3 days. Bring to room temperature before using.

NOTE: If you only make one batch of brownies, you will have leftover frosting. Store in the freezer for up to 3 months.
