Fresh Peach Tarts

Peach season is fleeting so make these beauties while you still can. The buttery, crisp little pastries are perfect Labor Day brunch fare and make equally great dessert, served warm with a scoop of vanilla ice cream. You won’t find an easier recipe!

INGREDIENTS
(Makes 1 dozen tarts)

1 (17.3 ounce) package puff pastry sheets (2 sheets)
2 - 3 fresh peaches
3/4 cup sugar
Maple syrup or honey, for drizzling

DIRECTIONS

1. Preheat oven to 400 degrees. Thaw puff pastry sheets according to package directions. Unfold a pastry sheet and use a pastry wheel to cut it into six 3-inch squares. Arrange squares on a parchment-lined baking sheet, about 1 inch apart. Repeat with second puff pastry sheet.

2. Cut peaches into thin slices. Place 2 to 3 slices on each pastry square. Sprinkle each square with 1 tablespoon sugar.

3. Bake for 15-20 minutes, until pastry is lightly browned. Just before serving, drizzle with maple syrup or honey. Serve warm.
